Our next bottle release will be Sunlight of Bygone Days on October 10th! It’s a 9.1% ABV Tripel aged in Chardonnay barrels with local apple cider that we boiled-down to caramelize! This isn’t a sour beer, but it was fermented with Brettanomyces which gives it an earthy aroma to balance the fruit. Bottles for pre-order through our website starting 10/9 for $16/500 mL!
The Cheese Up food truck will be here all day, indoor and outdoor seating, and we’ll have two kegs of Sunlight of Bygone Days to tap if you want to sample it without committing to an entire bottle.

Sunlight of Bygone Days

Tripel Brewed with Apple Cider, Aged in Chardonnay Barrels

Inspired by Belgium, Quebec, and Autumn. We waited longer than originally planned for this batch to mature. It started as a Belgian-style tripel with boiled-down apple cider replacing the classic white sugar addition. From there we aged it in Chardonnay barrels with Brettanomyces for 16 months. It emerged leathery, earthy, and appley. Still with some sweetness even after all of this time. It shares much in common with our barrel-aged sour beer… other than the sourness.
