Sapwood Kellers ($16/4-pack) 5.9% ABV
“Kellerbier” (cellar beer) is unfiltered and unpasteurized, often hazy, with a fresh malt and hop flavor. We hopped our version with German Saphir in the kettle and again in the fermenter (in flagrant disregard for the German Reinheitsgebot’s ban on dry hopping). The herbal-citrus-spice hop character balances the grassy German Pilsner malt.

American Amber Ale with Cascade and Chinook
Our homage to the signature beer of the 1990s, American Amber Ale. We brewed it with American 2-row, German Vienna, English Maris Otter, and a touch of Midnight Wheat then hopped with Cascade and Chinook, two of the classic citrusy “C” hops. Sure it’s a little fuller and hoppier than some of the originals, but hopefully the 90’s won’t call and ask for their beer back.
Stickied ($14/2-pack) 12.1% ABV
Imperial Stout brewed with Muscovado Sugar and with Cinnamon and Vanilla Added
We embiggened this stout with unrefined muscovado cane sugar in the kettle to add depth to the roasted and caramelized malts. After fermentation, we infused it with five pounds of Saigon cinnamon bark along with a double-dose of Madagascar vanilla beans. The spice cuts through the mocha flavor from the chocolate malt, while the vanilla transforms it into a luscious creamy dessert. Like dipping a sticky bun into a cup of black coffee!
