Saturday February 25th at noon we’ll release: Smüzí Triple Berry Banana (6% Smoothie Sour with Blueberry, Blackberry, Strawberry, and Banana Purees), Pilsner Kopírovat (5% Czech Pilsner), Classic Modern (5% Dynasty and Lost Lagers-collab Historic Hazy IPA), The Dragon (8.1% Rye DIPA with Nelson, Mosaic, and Hallertau Blanc), and Dream Logic (7.2% IPA with Hydra and Mosaic). All three new beers are on draft starting Friday.

Smüzí Triple Berry Banana ($23/4-pack): Smoothie Sour with Blueberry, Blackberry, Strawberry, and Banana Purees. A Sapwood smoothie sour… what a time to be alive! We loaded this batch with three berries (blueberry, raspberry, and strawberry) along with bananas for creamy smoothness. It’s a fruity, thick, tangy, sweet beer that is like breakfast for dessert!

Pilsner Kopírovat ($16/4-pack): Czech Pilsner. We did our best to copy what makes Czech Pilsners so special floor malted Czech Pilsner malt (ours was from Raven in Záhlinice), and expressive Saaz (we used the slightly fruitier “late Saaz”), along with a clean malt-accented lager yeast. We couldn’t import 500 gallons of low-mineral water from Pilsen… but a reverse osmosis filter achieved the same result, softening the hop bitterness and rounding out the malt flavor.

Classic Modern ($17/4-pack): Hazy IPA Brewed at Dynasty Brewing in Collaboration with Lost Lagers. A modern hazy IPA with classic hops and a long lost yeast strain revived from a brewery that was once upon a time America’s biggest ale brewery. Brewed with Bramling Cross, Brewers Gold, and Cluster Hops.

The Dragon ($21/4-pack): Rye DIPA DDH with Nelson, Hallertau Blanc, and Mosaic Cryo. We started off this series of hoppy rye ales more than a year ago. We’ve now reached the most powerful, a DIPA loaded with concentrated Mosaic Cryo from Oregon and Nelson Sauvin from New Zealand. The result is like fresh squeezed hop juice, tropical, fruity white wine, herbal dankness. The hop bitterness and malt sweetness balance with flaked rye providing a lusciously smooth body.

Dream Logic ($19/4-pack): IPA DDH with Hydra and Mosaic Cryo. We started this IPA off with barley, wheat, and quinoa! Quinoa has loads of protein, creating a luxurious mouthfeel! We gave it a hearty dry hop with Michigan Hydra, which brings passion-fruity aromatics. We pushed that aroma even more with a unique fermentation that created bubblegum notes. To temper all of that fruit, we added some dankness with Mosaic Cryo in the second dry hop dose!
