BSCM (Bourbon Stout Coconut Masala) ($22/500 mL): 11.5% The base beer is a blend of Graveyard of Forgotten Gods (Imperial Porter) aged in Wilderness Bourbon (a single-barrel selection from our friends at The Perfect Pour) and our double-mashed “sweet” imperial stout base in an Old Elk Wheated Whiskey barrel. Graveyard already had light spicing in the kettle, so it worked perfectly as a base, while the “sweet” base balanced the fresh spicing with dried ginger, cinnamon, cardamom, nutmeg, and black pepper. We toasted and ground those spices, then added vanilla beans and coconut to round out the flavor.
Timestream ($10/500 mL): 10% Timestream is the purest expression of our stout program, without “distracting” flavors from barrels or adjuncts. We bottled it in July, giving it four months to smooth out the rough edges. You can continue the aging in your cellar (or fridge) if you want to see how it matures! A 6-hour long boil increases the concentration of sugars while also creating new flavor compounds (melanoidins). The result is a more complex flavor with toffee and toasted almonds notes to go with the sweetened coffee, and char from the roasted barley.
