Old Gods and New ($22/500 mL): Maple Imperial Stout aged in Maryland Heritage Series 14-year Rye Whiskey Barrels.
This batch started as the base for Only the Trees Remember (without pecans). To refresh your memory, we added a 60 gallon drum of maple syrup to that 600 gallon batch of Imperial Stout! Real maple is a relatively subtle flavor when competing with a toasty-roasty beer, so we got the darkest most flavorful syrup we could find from Maine’s Sawyer’s Maple Farm. From there we procured some absolutely fantastic 14-Year Maryland Heritage Series Rye barrels through our neighbors at Allview Liquors. The spirit and wood help cut through the sweetness of the beer while adding layers of vanilla, baking spice, and a faint smokey char. The result is maple-caramel topped chocolate mousse with a rye old fashion.
